How It Works:
As you have probably figured out the key ingredient behind the magic chocolate topping is Coconut Oil (Copha is made from hydrogenated coconut oil). The coconut oil allows the chocolate topping to harden on contact with the cold ice cream because of its relatively high melting point of around 25℃. This means that as long as the temperature is at least 25℃, coconut oil will stay in liquid form. If you were to cool it down, it freezes into a solid.
